TOURISM – Malagasy gastronomy with Henintsoa Moretti to promote Madagascar as an international destination

Local gastronomy is gradually establishing itself as an integral part of Madagascar’s tourism promotion. With this in mind, the National Tourism Office of Madagascar (ONTM) and Chef Henintsoa Moretti, founder of Haka Fy Authentic Restaurant, have renewed their partnership until 2028. The agreement aims to showcase the country’s culinary heritage to international tourism markets.

Signed on September 3 at the ONTM offices in Antsahavola, the amendment extends a collaboration that began for the 2022-2024 period. Under this new framework, Haka Fy Authentic Restaurant will participate in international events organized by the ONTM, through demonstrations and tastings designed to present the products, recipes, and culinary expertise of Madagascar’s various regions.

The first event is scheduled in Paris in two weeks at the IFTM Top Resa trade show, featuring a “Flavors of Madagascar” showcase at the Malagasy booth. Chef Henintsoa Moretti will present bites inspired by traditional cuisine as part of efforts to promote the destination to tourism professionals. “It is about promoting local cuisines, such as regional specialties, in addition to the iconic dishes that tourists already know,” explains Henintsoa Moretti.

This approach builds on work the chef has been doing for several years regarding the transmission of culinary heritage. Her research has led her to meet “Mama Be” (grandmothers), who hold recipes and techniques passed down through generations. In 2022, her collaboration with the ONTM also resulted in the “Lakozia Mitety Faritra” series, dedicated to the culinary specialties of the country’s different regions.
